Twisty Keto Pesto Breadsticks🌿

Probably about 20 years ago, there was a great tearoom in Rockwall, Texas, called The French Pear. After you were seated they would bring a basket of the twisty pesto breadsticks that I just adored! They were made of either crescent dough or puff pastry, no wonder i adored them! Unfortunately, not allowed on keto! Oh no!

Well, thanks to Fox Hill Kitchens, I have my twisty pesto breadsticks back! I used the great Fox Hill Kitchens Bread Mux in place of the crescent or puff pastry dough. Now, are these breadsticks like that very, very flaky type of dough? No, they are not, but they are good, and that's the main objective when finding keto replacements.


I’m not sure if there is a way to make the dough more flaky. I will experiment and update this post on my next twisty pesto breadstick attempt. There already is baking powder in the bread mix, possibly a little more. I wonder what would happen if I added cream cheese or mozzarella? I’ll be thinking, but this was my first try, and things could be improved in the looks and possibly taste!


Here’s how I made them!


I first made the bread dough from the amazing Fox Hill Kitchens Bread Mix. This link has a video showing exactly what to do. It's very easy to make!


Now, the bread has risen and is ready to go! Doesn’t it look great?



I cut the dough in half and only used half to make these breadsticks.


I rolled the dough out fairly thin and tried to keep in in a rectangular shape. You can also use a knife to cut away the dough to make a rectangle, then cut 8 strips.


I used basil pesto and sundried tomato pesto with the brands below, but you can use any brands you like. Just watch for the carbs and ingredients as best you can. It might be hard to find a perfect pesto, so making your own is a definite possibility. I have made my own, and it’s very easy!


Cover the dough with both pestos. I might have put a little too much, but they turned out fine. However, I would still put a little less.


Then cover with shredded Parmesan cheese.



Now, the twisting begins! I finally figured out the best way to twist when I had two remaining breadsticks! I found the best way was to twist both ends simultaneously but in opposite directions. Then, after twisting, place in a greased pan. I used an air fryer and baked them at 325 degrees for about 14 minutes. But you can use a traditional oven. Just check often to make sure they don’t get overcooked.


Fresh out of the oven. If you can, serve them warm! I really liked them and have great memories of The French Pear!


So good with soups or salads!
