Green Beans Almondine

Green Beans Almondine is a reliable, tasty and “go-with-anything” dish! I’ve been making these green beans since the dawn of time. When I cook with them, I tend to use fresh or frozen French-style green beans (and who knew there were so many types of green beans?)

Green beans and almonds are already part of a keto diet - so there wasn’t much need to change how I had been cooking them during my carby life. But, I was curious to learn if there were any new recipes to be inspired by.


A Synopsis of Two Green Bean Almondine Recipes

I had previously recommended these two recipes in earlier blogs* but thought it was time for a revisit and comparison.


The first recipe is from The Conscious Plant Kitchen and is a vegan recipe which uses olive oil (instead of butter), vegetable stock and a sprinkling of parsley as a garnish.


The second recipe from A Beautiful Plate follows a traditional route by using butter as the fat for sauteing almonds. However, if you have any issues with dairy, it is recommended to try using olive or avocado oil instead. Towards the end of cooking, lemon juice and lemon zest are added to enhance the flavor.


Both recipes use shallots and garlic, however The Conscious Plant Kitchen adds some crush garlic at the end of cooking instead of having the garlic sauteed with the shallots.


Both recipes stress the significance of blanching the green beans before cooking them. If you are new to cooking, it might be best to try blanching first and see how it turns out. Even if it doesn't work out perfectly, you can still enjoy a delicious vegetable, albeit cooked a little longer.

French-Style Green Beans Almondine by The Conscious Plant Kitchen

Total cooking time is 25 minutes. This recipe makes six servings. For one serving, the carb count is 10.6 g.


Green Beans Almondine by A Beautiful Plate

Total cooking time is 20 minutes. The recipe yields four servings with a carb count of 17g per serving.


If you want to lower the carbs, you can change the number of servings you want. This is an excellent side dish, so a smaller portion may be the right size.

My favorite other veggie - asparagus! Gimme Some Oven has an ASPARAGUS ALMONDINE recipe that mirrors the traditional Green Beans Almondine. This is on my to-do list. But, asparagus has more carbs than green beans, so watch out for that.
