Fried green tomatoes were one of my favorite things to order as an appetizer. I had never tried to make them since I started Virta as I thought, with all that breading and the sweet vinaigrette - it would be hard to replace them. This recipe from Keto Cooking Christian utilizes almond flour and pork rinds to create that nice bready texture.
Of course, I had to make my pork rinds the cajun-flavored ones! That made it extra spicy. You can use the sugar-free ketchup-based dipping sauce from the recipe, or ranch dressing is very good too!
