Keto Frittata Egg Muffins

I spent 20 minutes making these “frittata muffins” on Sunday so I could have a good breakfast during the week. They are quick and convenient and I highly recommend them! I have never been much of a chef, but man I like eating (and making) these!!
























KETO FRITTA EGG MUFFINS


6 eggs

1/2 cup chopped spinach

1/2 cup chopped mini peppers

1/4 cup “beyond meat crumbles”

salt and pepper

cheese on top


The trick for me has been baking them for 12-14 minutes and then broiling them for ~2 minutes to get that hardened top.
