I made this recipe on Friday and it was delicious, so I thought I'd share. A winner. I used my instant pot and cooked the chicken with broth, enchilada sauce, and salsa (22 mins + 10 mins NPR). Added the rest after cooking. Super easy, and super flavorful. The "croutons" on top are crumbled pepper jack cheese crisps.
