Keto Green Chile Migas

I made Green Chile Migas for dinner. It was so yummy and would make an excellent breakfast, too, since it uses scrambled eggs! The first thing to decide is what to use for the corn tortillas in the recipe! I thought I had some Hilo tortilla chips to try, but I didn’t. I think they are about five carbs per bag and would work well as a crumbled topping. Mr. Tortilla tortillas (three carbs apiece) would be another option.

I ended up using Mama Lupe’s tortilla from Target. (These are listed in Virta's resource center as something generally acceptable to use, but if in doubt, check with your coach) Mama Lupe’s tortillas are ten carbs for one. I remember when they used to be seven carbs, so I’m not sure what Mama Lupe has done with that! I can only imagine. 🤷‍♀


I cut strips of one tortilla and fried it until crisp with some butter or olive oil. I made a half recipe, so I think one tortilla might be enough for a full recipe to keep the carbs down. But, of course, another added tortilla would taste great! Instead of green chilies, I used some salsa verde by Herdez (from Walmart) that I had in the fridge, which worked out great.


I made the rest of the recipe as instructed, except I added some chopped green onion and jalapeño sautéed in butter. I also used Monterrey Jack cheese. You don’t have to add green onion or jalapeño, or you could substitute some chopped bell pepper!


I garnished it with some chopped avocado, sour cream, and cilantro, served it up in the mini skillet I cooked it in, and added some sausage as a side. Eckridge has a great jalapeño and cheese sausage I really love! 🌶️
