Grinder Salads and Sandwiches are all the rage on Instagram and TikTok right now and it’s just a great salad (recipe link) to put on an Italian-flavored bread substitute or any other low-carb bread!
I subbed the bread with Cauliflower Sandwich Thins, toasted them in the air fryer, then took a small amount of submarine sandwich oil and put that on the inside of both sandwich thins. You don’t want it to be soggy.
Next, I did a couple of layers of cheese. I did provolone and muenster, but any cheeses that you like will work. Then use whatever deli meats you like. I used turkey, salami, ham, and pepperoni.
I then baked these for a few minutes at 350 degrees to melt the cheese. Remove from oven.
Tomato slices are next and I seasoned them with salt and pepper. Sprinkle shredded or grated Parmesan on top of the tomatoes.
Then lastly top the entire sandwich with as much Grinder Salad as you like. I served this with Broccoli Salad and some great snack chips by Genius Gourmet (they come in several flavors).
