Healthy Keto Pizza Rolls

I remember just loving those pizza rolls (I think the brand was Totino’s?) that were THE snack in the '70s and '80s when I was in school. I had one several years ago and UGH! What was I even thinking? Talk about disappointment. So I put my '80s playlist on and rolled up this healthy version! I have to say, healthy is much better. These were very easy, just a little bit time-consuming, but when you have U2, Journey, and Duran Duran playing it goes by pretty quickly.

These also can be made in the air fryer which makes them super easy! I served them with Rao’s or any low-carb marinara or vodka sauce would be good too! These were so yummy and would make a very good snack just to have in the fridge, so put some good music on and make a bunch! 🍝





Step 1. Slice the zucchini(s)

I used two zucchinis, but use as many or as few as you like. If you have a mandolin it makes it much easier to slice the zucchini. You can also just cut the zucchini with a knife or use a peeler, but you want the slices thin enough to roll up, but not too thin or the slices will fall apart. Before you start making the rolls, sprinkle some salt over the slices and this will help release some moisture from the slices so the rolls won’t be watery. Then plot them dry before rolling.




Step 2. Place the cheese and then season

Lay the slices out flat and place a strip of cheese on the zucchini. You can choose any flavor of a good creamy cheese you like, but I used provolone. Mozzarella would work great also. I then sprinkled it very lightly, with Italian seasoning and garlic powder. You want just a hint of seasoning because the pepperoni is very flavorful and you don’t want too much going on. You probably could just omit the seasonings, but I just thought they would be good.




Step 3. Place deli meat

Next, cut some deli ham slices into the same width as the zucchini. Place that on top of the cheese and then I added three slices of pepperoni. You could make these with pepperoni or even with just ham if you like, but the combination is very tasty.


Step 4. Ready to roll and bake

Roll them up as tightly as possible. You can secure it with a toothpick, but I didn’t. Then take two beaten eggs and dip the rolls in the egg and then in grated Parmesan cheese. I used the combination of parmesan and Romano just because it sounded better! Place the rolls in a greased pan. I sprinkled the tops very lightly with more Italian seasoning. I used the air fryer at 350 degrees for about 5 minutes. But you can certainly use the oven at the same temperature. Probably at least 5 minutes or until they get slightly brown on top. Serve with your favorite dipping sauce. Enjoy! 😊

A great mandolin for slicing

I like this one with the bin to catch things. They are very handy and make slicing things very easy! Watch your fingers though! This mandolin comes with a protective glove and I always use it! 👍🏼
