Homemade pasta dough is used to make delicious ravioli!
I bought a pasta maker to make low-carb pasta.
For the dough, I used melted mozzarella and cream cheese mixed with coconut flour. I pushed it through the maker at the thickest setting, then gradually went thinner with each pass (note: | had to keep the dough warm with 10-second stints in the microwave to keep it pliable).
I then cut circles out of the dough with an inverted glass. | put cooked seasoned meat and mushroom filling on the circles and covered them with a second circle.
Back in the microwave for a few seconds to soften the dough, then the edges were crimped with a fork. | used a basket dipped into barely boiling water for about 10 seconds to finally soften/cook them, then served with marinara, shaved parmesan, and fresh basil.
