Homemade Keto Pasta with Alfredo Sauce

After six years on Keto, I finally decided to make my homemade noodles! I would consider these like a one-serving mug recipe but for pasta. They were very quick and very easy. I made them in a small 8x8-inch aluminum pan in the air fryer. I liked this recipe. Some may be fooled by the taste. I like my pasta a little more Al dente though, but these were still good. They weren’t mushy, but they weren’t exactly Al dente either. I think I will experiment with cooking them a little longer. I did stop the baking in the air fryer one minute earlier because things usually cook faster in one, but I will try the full 8 minutes next time and see if that makes a difference. I think they would be even better served with a yummy protein and veggie. If you don’t like the chewiness of the shirataki noodles, this could be a nice noodle recipe to try. I could see these in a tuna noodle casserole, in soups, beef stroganoff, and maybe like a chili mac casserole! I think they can be whatever size noodles you like, even lasagna noodles! They are so quick, you will probably have all the ingredients. You can use cream cheese instead of Mascarpone if you like, so give these a try!🍝 (Also a Newbie recipe!)
