I’m Keto Baking Challenged!😲

Yes, I said it, and it’s true. I really don’t bake all that much, but I have learned a few things along the way that I’m happy to share. Of course, we can’t use wheat flour, so the two most popular flours are Almond flour and Coconut flour, but there are more! Have no fear! There is Pecan flour, Flaxseed meal, Psyllium Husk Powder, Chia flour, and more. I’ll be writing about the ones I‘ve had experience with, but for now, let’s concentrate on the Almond and Coconut flours.


They both have different properties that react differently in recipes. First, Almond flour is probably the most popular and is made, of course, with almonds. When baking cakes, cookies, and muffins, you want to ensure you get finely sifted and blanched. This removes the almond's brown outer shell and makes it more flour-like. If you leave the shell in and grind it up, it becomes an almond meal, which can still be used for other things. I’ve used it for breading for fried things and to make crackers. It’s also very nutritious with the shell left in!


Here’s my favorite almond flour by Blue Diamond. I love it. Everything turns out great, even though I can't bake! Ha! 👩‍🍳






The other popular flour I use a lot is Coconut flour. I think coconut flour is lighter and fluffier, and because it is very absorbent, you don’t need as much of it. You also have to watch it carefully if you have added it to anything being fried as it can burn quickly. It has a lot of good protein, fiber, and fat. It also can be added to soups and sauces and makes a good thickener. I keep both flours in the refrigerator, which lasts a very long time. Many recipes combine both flours, so having both on hand is a good idea.


The brand of Coconut flour I use is Anthony’s, and I don’t think it has a coconut taste. It’s really good and has lasted forever!







That’s my limited knowledge of Almond and Coconut flours. I think as our palates change, the taste of these flours becomes more and more acceptable. I have made so many things that I think could fool someone into thinking it’s a carby recipe. You’ve got to try this Texas Sheet Cake!😳 Oh my heavens, so good!
