These were very close to the store-bought carby ice cream sandwich. I just made cookies from the mug brownie recipe (any keto cookie will work). I only made three sandwiches, so I used a Dash mini griddle. Making one cookie at a time is a little time-consuming, so if you want more, it would probably be better to put them on a parchment-lined cookie sheet. I didn’t use an oven, so maybe bake at 350 degrees and watch them. You want them still slightly soft. Let them cool well, then fill them with keto ice cream. I kept them in a ziplock baggie in the freezer, ready to go!
