Holy Guacamole! It’s National Taco Day – But Hold the Carbs, Please!🌮


Today is the day we honor the most amazing of handheld culinary inventions: the taco. It’s the food that answers the age-old question, "How can I make dinner more fun?" But before you run off to stuff a crispy tortilla with a bunch of yummy fillings there’s a small, yet important issue... CARBS.


You know how it goes—traditional tortillas are basically the carbohydrate equivalent of a sugar bomb wrapped in a floury blanket. But don't despair because I've got some seriously delicious news. There's a way to taco without knocking yourself out of ketosis! Let's talk KETO TORTILLAS.


I’m including with the taco recipes plus a few tortilla recipes too! We have to have a good keto tortilla for our tacos!


I have found generally the tortillas I make myself are much lower in carbs than the bought tortillas I also will puse. But the convenience of just taking a tortilla out of a bag is hard to beat.


First here are the bought tortillas I tend to use most.


Siete Almond Flour Tortillas-I really like these a lot. Only problem is they are 10 carbs apiece!😢 They also have a non-keto ingredient, tapioca flour. (It probably is minimal) But if you plan your day ahead of time and test to make sure there isn’t a blood sugar problem, I think they can be used occasionally. They are also used on the Virta website.





 

Another tortilla I like is Mama Lupe’s. Seven carbs apiece, so not bad at all there. I buy them at Target and they are the best price there that I have found. Again some questionable ingredients, but they are also on the approved list on the Virta website, but check with your coach.





 

Another bought tortilla I will occasionally use is by Mr. Tortilla. I love the Pico de Gallo flavor and they are only 3 carbs, but they are small compared to the other tortillas. They also fry very well if you would like some chips or a crispy taco. Again, not the best ingredients, but I limit them to two tacos so I’m not consuming that much of the non-keto ingredients. Also a good idea to test your blood sugar. If you have a large spike then I would say they are no go, but if you don’t they can be good occasionally.






 


Tacos and Tortillas:

It’s no secret that tacos and tortillas go together like peanut butter and jelly, but if you're doing keto you have to get a bit more creative, so I will make my own tortillas. And it can be as simple as making a crispy taco shell out of shredded cheese. That’s a very good low carb option and it’s an easy way to get a crispy taco shell. So very good.


Now, I know what you’re thinking: “A tortilla made out of cheese? Will it just taste like a taco wrapped in a pizza?” Well, guess what? It’s even better. Let me introduce you to the cheese tortilla (aka: the taco shell that will change your life).

Cheddar, mozzarella, Parmesan—pick your cheese and let it sizzle on a skillet until it turns into a crispy and golden, then place it over a spoon to harden. You can also bake these in the oven.


Here’s how to make them.


Cheesy Keto Tortillas (A.K.A. Cheese Shells)

  • Ingredients: 1 cup shredded cheese (cheddar, mozzarella, or whatever melts your heart)

  • Instructions:

    1. Preheat your oven to 375°F.

    2. Place small mounds of shredded cheese on a parchment-lined baking sheet.

    3. Bake for 5-7 minutes until the cheese melts and turns golden and crispy.

    4. Let cool slightly (don’t burn your tongue on molten cheese, friend!) and mold over a rolling pin to shape into taco shells. Voila!


But wait—maybe you like flour tortillas. Here’s a good almond flour recipe.


Try almond flour tortillas for that perfect pliability or you can also use coconut flour. Whatever you choose.


Almond Flour Tortillas

  • Ingredients: 1 cup almond flour, 2 eggs, ¼ tsp xanthan gum, a pinch of salt

  • Instructions:

    1. Mix all ingredients together until a dough forms.

    2. Roll out dough between two pieces of parchment paper.

    3. Heat a non-stick pan over medium heat and cook tortillas 1-2 minutes on each side.

    4. Fill them up with all your favorite keto-friendly toppings!


Here are two other lfavorite tortillas that I will make now.


I’ve made A LOT of keto tortillas! So many different ways to make them, but these are my two favorite ways. It’s also much less expensive to make your own!


These Fox Hill Kitchens tortillas are very low carb (only 2.5!) and they have perfect and clean keto ingredients! They are delicious too!




Also I really like this microwave tortilla! So easy! Good ingredients and only 6 carbs!




Toppings:

Now that you’ve got the perfect keto tortillas, let’s talk fillings. Whether you’re a carnivore who likes beef, or grilled chicken, or a shrimp taco, your options are limitless. Keep it keto with a guacamole (because avocados = life), salsa, cheese, sour cream, jalapeños, lettuce, and any other low-carb goodies you can think of. I love to serve tacos with Mexican cauliflower rice, I’ll include that recipe at the end. I also just like to to slice some cucumber and sprinkle the slices with Tajin, the chili lime seasoning. So good!
