Spicy Keto Jalapeño Cheddar Corn Dog Chaffles

I’m blaming this whole thing on the Keto Twins! 😃 I love to watch their videos, and they are always making something in their keto test kitchen that lures me into wanting to try it myself! Ha! It’s all their fault I spent four hours trying to put keto corn dog chaffles on a stick, one at a time using a single mini Dash waffle maker!😳 It took a lot of trial and error, but I finally got the hot dog and cornbread to stay on the dang stick. Then I gave up after four and just made stickless corndog chaffles! Much easier! I used a different low-carb cornbread mix than they used. I’ll put the link below. I used the cornbread mix by Good Dees, which I already had and have used several times over the last few years. I make jalapeno cornbread with it (SO good!😊), which I use to make cornbread dressing at Thanksgiving 🦃 I also love to serve a piece of cornbread with the Texas Chili recipe here on virtaworks.

I followed the Keto Twins video instructions but added some Mexican Fiesta Cheddar Cheese and chopped jalapeños to the mixture. I used some Johnsonville Jalapeño Cheddar sausages for the corn dogs. I thought I was being fancy serving both the corn dogs and the chaffles with GHughes Honey Mustard sauce. Something was missing. I wasn’t getting that State Fair Corn Dog feeling I sought! I needed to try mustard! That’s what I use at the fair! That did it! Both corn dog chaffles were so good with the mustard! So, I’m thinking this whole keto stick experience will be like childbirth. I may not feel so traumatized with a bit of time and appreciate the yummy corn dog chaffles even more! 🌭😃 (It wasn’t that bad; I’m just kidding! Ha!)


These were fun and very tasty. You’ve been warned about the sticks, so save yourself and make the whole chaffles! I just put slices of the sausage all over the batter and then put a tiny bit more batter on top. Cooked them for about four minutes. 🧇


Here’s the link for the Good Dees cornbread mix. 🌽 I know this is a bit pricey, but is pretty typical for keto products. It is probably something you won’t be having every day).







Here’s how the Keto Twins made their version of the Chaffle Corn Dog! This video caused me to lose four hours of my life trying to get a chaffle on a stick! Ha! I liked how they came out; there are just no more sticks! Don’t worry Keto Twins I forgive you!
