Yummy chocolate-covered coconut balls are good for holidays or just as a snack!
Hot chocolate coconut balls.
Well, I have outdone myself this time. You are going to love this keto snack (recipe).
Ingredients:
1 TBSP Butter
1 cup whipping cream
1-1/2 cup unsweetened cocoa
10 drops of stevia sweetener
Ganache:
1/2 cup of whipping cream
2 squares of 100% cocoa
Melt 1 tablespoon of butter in a saucepan. Add the cup of whipping cream and bring to a boil -- let the water evaporate out to a smooth texture and then add one and a half
cups of unsweetened coconut, and 10 drops of stevia sweetener and keep folding till it
becomes crumbling. Put in a small pan with parchment paper and let cool. After it
cools roll it into small balls and stick them with a toothpick and place them in the refrigerator.
Prepare your ganache by mixing a cup of whipping cream and two squares of 100% cocoa (or whatever you prefer). Melt down to a ganache and remove from stove. Dip balls into the ganache and then return to the refrigerator until cool—30 minutes to 1 hour.
