Josie M’s Chorizo Tacos

Delicious chorizo tacos all in a chaffle taco shell! You can also just make a cheese taco shell by melting cheese in the shape of a tortilla and baking it in the oven. Then fold over a spoon to harden it into a shell!


Cook your chorizo until completely cooked.

Prep the tacos with chorizo and top with cilantro, onion, and salsa.

Each taco has 1 oz. of chorizo.


For the chaffle, I used just thin shredded cheese, no other ingredients. I put enough of it and left it in a mini waffle maker long enough to get brown. Then once I got it out I folded it just a bit and let it cool off so it could get a taco shell shape. Chorizo isn’t runny or juicy so it didn’t melt my cheese.
