Baking has been my avocation for many years. Bread. Cakes. Pastries. You name it. I still bake everybody's birthday cake, but very little baking a treat for me since starting Virta. Add to that I abstained from fruit until starting my 7th month of Virta. Fruit was ok’ed for me on Day 30, but I didn’t like the numbers when I tried it, so I didn’t try again for another 5 months.
I found this recipe for blueberry cobbler and decided to try the fruit. I loved it. The smell of the crumb topping is fantastic. Each tartlet has 8 carbs, so it's best to freeze these for later or try to bake them in mini muffin tins for lower carbs.
Now that berries are back in my food wheelhouse, I plan on trying out lots of recipes
this spring/summer.
