Roasted eggplant with a yummy cheesy filling!
Scoop out the eggplant, cook 1/4 pound ground beef, 1/4 pound ground sausage, some Rao’s,
Add this to the insides of the scooped-out eggplant, plus garlic, basil, a couple of mushrooms, and of course plenty of mozzarella and Parmesan.
Easy to make ahead and store for the week. Also for you to customize what you want
inside. No recipe I've been making variations of this for years.
