I saw the original version of this recipe in Southern Living magazine probably about 20 years ago and have been making it ever since! It is one of my all-time favorite salads! I especially like to serve it in the spring and summer with beautiful strawberries! I have added blueberries for the patriotic holidays, and you will have a festive red, white, and blue look with feta or blue cheese sprinkled on top!
But when I started following the keto diet almost seven years ago, I had to bring my beloved salad with me, so this is my keto version. It’s still just as good and just as beautiful—just without all the sugar!
The dressing is delicious, and I like to keep it on hand for other salads. I usually have some leftovers anyway. I made the mistake of pouring too much dressing before, which just deflated this beautiful salad and made it very soggy! I was so upset! So now I just barely pour a very small amount of dressing on the lettuce, mix well, then add the strawberries, pecans, and cheese, and when I serve it, I drizzle more dressing on top. It works out much better that way!
