This was a great dip I saw on Instagram by cookwithchay that I thought would be so good ketofied just a little. It was basically all keto to begin with except for the sweet corn. It’s interesting, I checked the carbohydrates in sweet corn and there is a wide disparity for some reason. Anywhere from 19-42 carbs per cup. But compared to baby corn at 4.2 carbs per cup I thought I would sub it for the sweet corn. There are several other low carb veggies that can be used though. The baby corn was OK, but I think I would prefer this dip with some chopped yellow pepper, mushrooms, cauliflower, or zuchini better. I think you cal so just make it anall jalapeno dip with added jalapeno. Baby corn just doesn’t have that much taste to me, but it definitely looks the part of a corn substitute! So this is a great recipe to customize how you like it.
Here are the ingredients and steps to make it.
Chop one can of baby corn into small pieces and sauté in one Tablespoon of butter. Add pepper and paprika.
Then add in all the other ingredients and stir until melted.
I poured the dip in a small crock pot and kept it warm that way then garnished with some salsa, but hot sauce, jalapeño, paprika, and/or cilantro would all be good! I made the healthy version for me for a 4th of July party, and the not so healthy version for everyone else. This a great dip to serve at a BBQ!
