If you're a fan of bold Mexican flavors and bold Asian flavors then you probably will be a fan of Keto Birria Ramen. It’s a fusion of Mexican and Japanese cuisines that has taken the food world and Social Media by storm. Have you noticed all the Ramen restaurants popping up everywhere? Traditionally, this dish features tender, slow-cooked beef in a rich, spicy broth served with ramen noodles. But what if you're living a keto lifestyle? Don't worry I’ve got you covered! Introducing Keto Birria Ramen, a low-carb, high-fat version that’s just as satisfying and flavorful as the original version.


Birria, is a traditional Mexican dish from Jalisco and is typically made with goat or beef that’s slow-cooked in a rich, spiced broth. The broth is packed with flavors from dried chiles, garlic, cumin, and other spices. When combined with ramen noodles, it creates a super yummy meal that you can add whatever garnishes you like to make it your own.



These are the steps for Keto Birria Ramen.


First you need to make the Birria. Here is my post on how to do that when I made Birria Tacos, another great Birria recipe.



This is what the Birria looks like when it’s all done. Slow-cooked tender beef in a delicious spicy broth/sauce. Doesn’t it look SO good?



These are the Birria Balls that I used to make the Birria meat. So much easier to use than making everything from scratch. You just drop a spice ball in the broth while the beef is slow-cooking and that’s it!





I had to look at a lot of balls! Ha! Most of the ones I looked at contained brown sugar and other non-keto ingredients and were very high carb, but not these balls, oh no!




Let’s Assemble


OK, most important part done. The Birria meat is shredded and ready to go This is where you can let your keto cooking imagination go wild and you can choose your noodles and all the other ramen ingredient add-ins.


Here are some suggestions for noodles


The challenge for keto dieters is in the ramen noodles, which can be high in carbs. But with a few clever swaps, you can enjoy all the deliciousness of Birria ramen without breaking your carb limit. I think of how many keto noodles there are now compared to when I started keto almost eight years ago and it’s mind boggling! So many to choose from! Here are just a few:


1.Zucchini Noodles (Zoodles): Spiralized zucchini makes an excellent low-carb substitute for traditional ramen noodles. They’re light, fresh, and soak up the flavorful broth really well.

   

2.Shirataki Noodles: These Japanese noodles are made from konjac yam and are virtually carb-free. They have a slightly different texture than regular noodles, but they work great in this dish.


3.Cabbage Noodles: Thinly sliced cabbage can also be used as a noodle substitute. It adds a nice crunch and goes well with the rich broth.


4.Egg White Noodles: This is what I used and I’ll talk more about these noodles below.


I saw Maria Emmerich’s video on her ramen recipe and she used the Miracle Noodle Egg White noodles. I’ve tried the egg white noodles by Noodle Revolution before.

But I hadn’t tried the Miracle Noidle Egg White Noodles. Maria used the Egg White Vermicelli, which is more like Angel hatr, but I decided to use the spaghetti which is a little more substantial noodle.


Here is Maria’s video with her version of keto ramen using pork belly and the egg white noodles. This looks very good also!



This is what the spaghetti looks like and this is TWO packages. I didn’t think one package was enough for the ramen recipe. So not the most substantial packages of noodles

Nutrition Label & Ingredients

Egg White Spaghetti

  • Serving Size: 1 bag (about 226g)

  • Total Carbs: <1g

  • Fiber: 0g

  • Net Carbs: 0g

  • Protein: 3g

  • Fat: 0g

  • Ingredients: Water, Egg White Powder, Citric Acid

it’s hard to beat less than one carb for the entire bag. The addition of egg white powder gives egg white noodles a slightly higher protein content than traditional shirataki noodles. These noodles will work on Carnivore too!

Texture & Taste

Egg White Spaghetti

  • Texture: These noodles have a slightly more pasta-like bite compared to traditional shirataki noodles which are considerably more chewy. The addition of egg whites helps eliminate the rubbery, gelatinous texture often associated with konjac-based noodles. But if you prefer an al dente noodle I would not consider these al dente, but for the people that think shirataki noodles are too rubbery this could be a perfect noodle for them.

  • Taste: Virtually neutral, which makes them a great base for sauces. However, they do have a mild eggy smell when first opened, but that disappears after rinsing and cooking.

  • If you want a more traditional pasta texture, go with Egg White Spaghetti.

  • If you prefer something ultra-light and want to mimic Asian-style vermicelli, the Shirataki Noodles are a good option.

  • Both work great in soups, stir-fries, or keto pasta dishes, but they must be rinsed and cooked properly to avoid a rubbery or slimy feel.



OK my noodle selection is done.


I cooked the egg white noodles in the Birria broth and added them to a nice Asian-inspired bowl. We have to look authentic!


Keto Birria Ramen is already packed with flavor, but you can take it to the next level with these keto-friendly add-ins:

Toppings & Garnishes:

  • Shredded Cheese – Try Oaxaca, Monterey Jack, or cheddar for extra creaminess.

  • Chopped Cilantro – Adds freshness and a pop of color.

  • Sliced Jalapeños – For a spicy kick.

  • Radish Slices – Thinly sliced for a bit of crunch.

  • Toasted Sesame Seeds – A subtle nuttiness to complement the broth.

  • Crushed Pork Rinds – For a crunchy topping similar to crumbled tortilla chips.

Broth Enhancers:

  • Bone Broth – Boosts nutrition and gives the broth even more depth.

  • Chile Oil or Chili Crisp – For extra heat and umami.

  • Coconut Aminos – A touch of sweetness and extra depth of flavor.

  • Garlic Oil – A drizzle for added richness.

Extra Proteins & Add-Ins:

  • Soft-Boiled Egg – A ramen classic that adds protein and creaminess.

  • Chicharrón Pieces – For a crispy, fatty bite.

  • Shredded Chicken or Pork – If you want even more meaty goodness.

These additions will elevate your Keto Birria Ramen while keeping it low-carb and packed with flavor! What sounds best to you?


I used diced red onion, radish slices, pickled jalapeno slices, a lime wedge, chopped cilantro, and I was so proud my soft boiled jammy eggs turned out so great. If you don’t usually use a soft boiled egg, definitely try it. They are so good. I just placed the eggs in boiling water for 7 minutes then cooled in an ice bath.




And the yummy finished product!



This Keto Birria Ramen is packed with healthy fats from the beef and eggs and also the low-carb egg white noodles keep it perfectly aligned with your macros. The broth is rich in flavor from the broth. Plus, the spices in the Birria broth are known to boost metabolism and provide anti-inflammatory benefits.
