Keto Birria Tacos🌮

If you've been anywhere near social media lately, you’ve probably seen the viral birria trend taking over food blogs, TikTok, and Instagram. Birria is traditionally made with slow-braised meat in a rich, spicy broth, birria has become a must-try dish, especially in the form of tacos dipped in the flavorful broth. But what if you could enjoy all that incredible flavor while keeping it keto? That was my mission. I kept seeing these birria spice balls to make this super delicious birria meat even easier on Tik Tok and Instagram. I’ve made Birria before, but I did it from scratch and it is a bit time consuming so I was interested in trying these easier viral balls! BUT the only problem was the brand I kept seeing on Instagram and Tik Tok wasn’t exactly keto. It had a few not so great ingredients, with brown sugar leading the list. I went on Amazon and looked at A LOT of birria balls to find a good one and I think I was able to accomplish this! I found this brand with good, clean keto ingredients!

These keto birria balls provide a super yummy low carb meal that keeps all the bold, meaty goodness without the added carbs from sugar and other not-so-great ingredients. Birria made completely from scratch takes A LOT of ingredients and takes A LOT of time. These spiced balls are packed with birria seasoning that could be close in cost to what you would have to buy. I did a double recipe, but you could just do one roast and that would be $9 for one spice ball. It’s worth it to me all the time and energy it saves. Then you just slow-cook the beef, and serve it with the warm consommé that is made from the slow cooking. It’s a game-changer for anyone following a keto or low-carb lifestyle! I’ve had several meals with it, made a Birria Pizza and Birria Ramen. Also put it in breakfast eggs.

How to Make Keto Birria with SPICEMEX Birria Balls

Ingredients:

  • 3–4 lbs beef chuck roast (or beef shank, short ribs, or goat)

  • 4 cups beef broth (or water)

Instructions:

  1. Sear the Meat

    • Heat olive oil in a large pot or Dutch oven over medium-high heat.

    • Sear the beef on all sides until browned (about 3–4 minutes per side).

  2. Add the Birria Balls & Liquid

    • Pour in the beef broth and add the SPICEMEX Birria Balls directly into the pot.

    • Stir in the dissolved spices.

  3. Slow Cook

    • Bring to a simmer, cover, and cook on low for 4–6 hours until the meat is tender and easily shredded.

    • If using an Instant Pot, pressure cook on high for 60 minutes, then let it naturally release.

    • For a slow cooker, cook on low for 8 hours.

  4. Shred and Serve

    • Once the meat is fork-tender, remove from pan and shred it

    • Boil the consommé to reduce it some then it with the shredded beef to soak up the flavors.


Sear the Beef


I used two 2.5 pound chuck roasts but you could use brisket also. That would be super good! I sprinkled generously a seasoning salt/rub all over both sides of the roast. Then seared it on all sides in avocado oil.




Add Broth or Water


The package instructions said you can use broth or water and of course I chose beef broth But to use water would cut down on cost. With the cost of groceries these days every little bit counts. The instructions say to add 4-6 cups of liquid.


I chose to cook on top of the stove because I don’t have a very large crockpot, but the crockpot does a very good job I’ve made Birria before and it is amazingly tender in the crockpot. Or you could do Instant Pot.


I cooked this covered for 3-4 hours on low.


All Done


Three to four hours later the meat is cooked and so nice and tender. There is a delicious, spicy consommé to cook the tortillas in and dip them in, but I wanted it just a bit thicker so I removed the beef and let it cool then I increased the heat and reduced the consommé.


Time to Shred


I removed the two roasts from the pan to let them cool before I shredded the beef. I also reduced the consommé just a little bit. Then I saved some of the consommé to serve in individual bowls for dipping and to cook the tortillas in, then added the shredded beef back into the remaining consommé.



Cook the Tortillas


I think this is what sets Birria tacos apart from regular tacos. The low-carb tortillas (see below for the best to use) are cooked in the consommé, flipped and cooked on the other side, then filled with the beef, cheese, and onion/cilantro mixture This makes the tacos so infused with flavor and the cheese so ooey gooey and melty. YUM!


Finish Cooking the Tacos


You can use whatever cheese you like to fill the tacos. I used quesadilla cheese. Place your cheese on half of the tortilla, after it’s been cooked on both sides, then add the Birria beef, then top with a mixture of finely chopped onion and cilantro, with a squeeze of lime juice. Fold the other half of the tortilla over the filling and continue to cook until the cheese melts.


And Now the Sides


I made a medley of all the different colors of bell peppers and onion. I just sautéed them in a little butter and seasoned with some seasoning salt and pepper.


I made this yummy Mexican Cauliflower rice too. It was so good with the Birria tacos.



The Finishing Touch


Place everything on the plate. Make sure to put a small bowl of the consommé to dip the birria tacos in. Add some cilantro to the consommé for extra flavor.



Nutrition Information


There are a few variables that determine the carb count. The number one thing is which tortilla you choose. There are a few tortillas that I think would work with this and still let you stay in Ketosis. Of course tge higher carb tortillas you might just be able to have one taco.


I chose a particular tortilla by A la Madre that I just love, but it does contain corn. But before everyone gets up in arms, they are only 3.5 carbs apiece and that’s the lowest manufactured tortilla I have found for a regular size tortilla. But for those with diabetes, definitely check your blood sugar response to them. These are also very occasional for me. I could eat tortillas every day, but unless I make my own, it is extremely difficult to find a good tortilla that is low carb and with good ingredients. I think you can achieve that making your own and there are several recipes on virtaworks that yiu could use with your birria tacos that would be very doable.


Here is a video from Steve, with Serious Keto and he rates the different low carb tortillas in terms of his blood sugar response, carb count, and ingredients. It shouldn’t be this complicated to get a good low carb tortillas in that checks all the boxes.



These are the tortillas, with nutrition, that I used by A la Madre and where to buy them. I chose them because one tortilla is just 3.5 carbs and I wanted two tacos!



This is another tortilla I really like because the ingredients are so good, but at 10 carbs per tortilla I can only eat one taco. The Siete food products are very impressive because they such good, clean ingredients.





I personally think the best way to control the carb count and ingredients is make your own tortillas. This is a great 90 second tortilla that’s tastes very good and is only 6 carbs.






So which tortilla you choose impacts the carb count greatly. But here are the rest of the carb counts. Another factor that determines the carb count is how much you put on each tortilla.


3 pounds of Chuck Roast 0 carbs

1 Birria Ball 3 carbs (I’m not sure if that is for 1 ball or 2)

4-8 Cups of Water 0 carbs

4-8 cups Beef Broth 3-7 carbs

3 cups Quesadilla Cheese 12 carbs

1 small white onion 11 carbs

1 cup Cilantro <1 carb


Total Carbs. Approximately 30 carbs / by 12=2.5 + tortilla


Then add your tortillas and I’m not sure about the servicings. I would say allow 1/4 pound of Birria Beef per person so three pounds would equal 12 servings.


Final Thoughts

If you love bold flavors but don’t want to spend hours in the kitchen, SPICEMEX Birria Balls are a game-changer. They make it easy to enjoy authentic keto-friendly birria while saving time, effort, and money. Try them in your next meal, and you’ll never go back to the old way of making birria!
