This was such a filling meal, and I was so happy to have burritos again! I never thought I could have anything like this ever again! It was comparable to a burrito from any Mexican restaurant, and I could even say it was better. I took a burrito-size tortilla, put some Mexican blend cheese on it, and melted it in the microwave.
Then, I added Birds Eye Spanish-style cauliflower rice. I cooked it for about 8 minutes or more to get the crunch out. I placed almost a whole package in the middle of the tortilla.
Then, I made two different kinds of meat and put them on the two separate tortillas. One was Tyson Blackened Chicken Strips and the other was grilled skirt steak.
Next was another sprinkle of cheese, then a layer of avocado with some salsa. Sour
cream or a jalapeno ranch dressing could be added.
