Keto Carrot Cake

Yes, there are carrots in this cake!😃 I’m glad I got that out of the way! Ha! But I did halve the one cup required in the recipe and replaced it with 1/2 cup of grated zucchini.

According to Fat Secret, there are only 5.27 carbs for 1/2 cup of grated carrot. So divided by eight servings you are getting less than one carb (0.66 carbs to be exact) per serving. This is not much at all.


So you could choose to do all carrots, half carrots and half zucchini, or all zucchini to save even more carbs and I think you will be acceptable whichever direction you choose.

This cake is a lovely cake for Easter, and the recipe specifies it is for a one-layer cake. I chose to go the two-layer route, using a smaller cake pan, as the recipe’s author suggested. Consequently, I needed to double the cream cheese icing because I also decorated my cake. If you choose to do only one layer, the single recipe for the icing probably will work.


This cake is delicious, and I think non-keto people will like it. I hope it can make your Easter dinner even more special! 🥕 Doesn’t it look so good?😀
