Beef Casserole with Cabbage and Hearts of Palm Lasagna

I’ve made variations of this "Don't Touch" casserole several times, but this is the first time I made it with cabbage and pasta. Usually, it’s just cabbage, which you certainly can do, but the pasta adds a little more texture and makes it more filling. Also, you're adding another veggie if you use hearts of palm. Technically, you could add whatever low-carb pasta you like.


To make a low-carb version of this casserole, I cut Palmini Hearts of Palm Lasagna Noodles into strips to mimic egg noodles. I love these noodles! I then boiled them in the beef broth for about 15 minutes; even though they are baked, I just think it takes that to make them less crunchy. After that, I didn’t add much of the beef broth because the hearts of palm noodles don’t soak up liquid like regular pasta. I also added some chopped garlic and chopped bell pepper. I put garlic in everything! Well almost! I don’t have an instant pot, so I just baked it in the oven, covered at 350 degrees for about 30 minutes. Then I uncovered it, sprinkled the cheese on top, and baked it for a few more minutes until the cheese melted. This is very yummy, with or without the noodles! 🥘
