Keto Chayote Fries

I recently discovered chayote 3-4 months ago and I have gone chayote cra cra!😃 I’ve had so much fun trying different ways to use chayote. It’s very low carb, only 6 grams per cup compared to cauliflower at 5 grams. But what is chayote?


Chayote Squash is really a keto Super Food! It’s packed with a good amount of nutrients, Vitamin C, amino acids, and good anti-oxidants. This green squash looks like a big pear, or some think it looks like a green apple. It can be eaten with its skin on and doesn’t require peeling, but I usually do. It tastes like a cross between an apple and a jicama. It’s very sweet and crunchy and is great sliced in salads or soups. I buy them at Walmart, but the ones at a Mexican or Asian market are much better. I urge you to try them and see what you think. For the last few months. I’ve tried chayote in soups and casseroles, made a couple of chayote hash recipes and salads, and even made an “apple” crisp dessert. It was SO good! Put chayote in the search bar and all these recipes will pop up.


But what’s left? Fries! 🍟


I made them with the traditional keto breading of pork rind crumbs, and egg, but I added some spices and Parmesan cheese. They were so easy to cook in the air fryer, but you could fry them also. I served them with Truff Mayo (link below) and Sugarfree ketchup. I lined the chayote fries a lot. They possibly could fool someone thinking they are potato fries, possibly. I noticed they are slightly more moist than a regular potato fry, but still very good and potatoes are definitely not a keto super food!


So here is how to make them!


Peel, cut into wedges and seed




Dip wedges in egg, then pork rind crumbs, then place in a greased pan



Bake @325 degrees for 15 minutes



Serve while hot!




Dipping Sauces

Sugarfree Ketchup

Ranch Dressing

Truff Mayo (Truffle flavored mayo, takes everything to the next level!)


A little goes a long way!

Can’t forget some cute French fry holders. These are much cuter than mine! Line with tissue paper or food grade paper!
