Chayote is my new favorite veggie, although technically, it’s a fruit. But it is very low carb and has so many health benefits! Here’s my post on this amazing veggie/fruit.
I used this recipe to make this great side dish.
I started peeling, seeding, and cutting the chayote into half-moon slices.
Then, I fried the bacon, removed it from the pan, and added all the veggies. I did add one seeded and chopped jalapeño.
Next, I removed the veggies and sautéed the chayote. Then, I added the veggies and bacon back in. I garnished with fresh thyme.
I served this with the marinated steak.
The chayote made the perfect side dish for this great steak!
