Who doesn’t like a cheeseburger muffin wrapped in bacon with sautéed onion, mushrooms and cheese? If there is someone out there that doesn’t I don’t want to know them! I saw this great recipe from thefoodcafe.com and had to make it.
Yummy muffins to just pick up and dip in Big Mac Sauce. No bun needed at all! I made the recipe pretty much as is but I added chopped jalapenos. I ALWAYS add chopped jalapeños. They add so much flavor and really aren’t hot if you remove the ribs and seeds on the inside.

I do have a couple of recommendations that I would change next time though and I’ll describe those as we go along in the recipe. I also added some sautéed chopped jalapeños, but this is entirely optional, but does add a lot of great flavor!m
WHAT INGREDIENTS DO YOU NEED FOR THE MUFFINS?
pound ground beef
cup onion, diced
cups mushrooms, sliced
olive oil
bacon ( I used Applegate)
shredded cheddar cheese
shredded white cheddar cheese
dry onion soup mix (see link below)
garlic powder
Worcestershire sauce
green onions, diced for garnish
INGREDIENTS FOR BIG MAC SAUCE (makes a great salad dressing too!)
mayo
sugarfree ketchup
mustard
sugarfree sweet pickle relish (see link below)
white wine vinegar
garlic powder
onion powder
Step One
I first chopped and sliced the onions, mushrooms and jalapenos and added them to a skillet with half a stick of butter or you can use your oil of choice. I sautéed these until tender, about 5 minutes.
Step Two
Take a muffin tin and line each cup with a slice of bacon. The Food Cafe says to use half a slice, but I found one whole slice fit better. I also would recommend either pre-cooking the bacon at least half-way before lining the tin or the tin and just bake the bacon by itself until at least half way done. I had to cook the whole muffin so long to get the bacon done, I feel it overcooked the beef. To me overcooked beef is a kiss worse than death. I can’t do overcooked meat. But if you like your meat well done then bake everything at once.
Another option would be to add cooked bacon to the ground beef and just line the muffin tin with only the ground beef mixture. That might be the easiest and best idea of all!
I had some leftover keto bread dough, so I put that in the bottom of each tin just to experiment. I think it was actually good, but this also needs to be cooked first I think. This is something that is not necessary at all and I think the muffins will be just as good without the bread layer.
Step Three
Next I seasoned the ground beef with the onion soup mix, garlic powder, onion powder, seasoning salt and Worcestershire sauce. Then pressed the ground beef into the muffin tins.
I just pressed the meat in with my hands, but a glass would have worked even better to make a nice cavity to put the onion/mushroom/jalapeno mixture.
I used this great onion soup mix that has good clean ingredients called Just 5 by McCormick. You don’t have to worry about any unwanted or bad ingredients. I’ve bought this at Walmart, but get a better price for multiple packets on Amazon. I use quite a few of the packets in recipes for entrees like pot roast, or dips and soups.
Step Four
Next add the sautéed veggies.
Step Five
Sprinkle with the cheeses and bake at 400 degrees until the ground beef is done to your liking!
Then prepare the Big Mac Sauce while the muffins are baking! These are very yummy and make a great snack!
