I've been making the carby version of this casserole forever but switched to making it healthy and keto about six years ago. It is STILL delicious without all the carbs! I like to add a couple of finely chopped jalapeños. If you take out the ribs and seeds the jalapeño isn't hot, it just gives a super good flavor. I also use seasoning salt and pepper. I make this without the chicken as a great side dish casserole for holiday meals. This is a super yummy casserole!
