Keto Chorizo Breakfast Tacos with Chayote Hash

I decided to shake up the usual breakfast taco type recipe and use some chorizo and chayote and make a delicious hash with the two and top it with a yummy fried egg. All of this yumminess help with a Fox Hill Kitchens 2,5 carb tortilla. Here’s how to make them.



First make the FoxHill Kitchens 2.5 carb tortillas or use a low carb tortilla of your choice.




Next, just cook the chopped chayote in the olive oil and season with the salt and pepper and paprika, Remove from pan and add to the pan the chorizo, garlic, shallot, and spices. Then combine the chayote and chorizo and add the chives and cilantro. Divide the mixture onto the 4 tortillas and top with a fried egg, drizzle with some hot sauce and chives and prepare to have a very delicious breakfast!


I’ve recently discovered Chayoye and it has definitely enhanced my low carb journey because it’s delicious and very low carb! It’s available at most grocery stores, but Mexican markets for sure will have it.
