Well the cottage cheese craze continues, this time using it to make a keto flatbread! I was a little skeptical, but all the reviews seemed very positive, so I put it to the test and here’s here’s how to do it.
This is very basic recipe and everyone seems to use the same two ingredients, eggs and cottage cheese. You can add additional seasonings which I did choose to do. See the recipe below.

These are the ingredients I used. Himalayan Sea Salt, Black Pepper, and Garlic Blend by McCormick, Garlic Powder, Onion Powder, Red Pepper Flakes, Cottage Cheese, and Two Eggs.
Place all the ingredients in a small blender or use an immersion blender. You can use no seasoning or however much you like. Cottage cheese is very salty so watch how much salt you add! Blend well
Pour all the mixture onto a parchment paper or silicone baking mat lined cookie sheet Make sure you spray the parchment paper with cooking spray. Spread the mixture evenly over the entire cookie sheet. Place in the oven at 350 degrees for approximately 30 minutes or until lightly toasted.
After removing from the oven, let cool a few minutes, then turn it upside down the counter to remove the parchment paper or silicone mat. This works out much better than trying to remove the flatbread on the top. Cut to your desired sandwich size. You could do three sandwiches very easily and cut down on all the macros.
I don’t like bread overly cooked so I stopped the baking at about 25 minutes I wasn’t sure if the underside was getting too brown, but I think next time I will let it bake for at least thirty minutes
I spread the flatbread with Truff Mayo. This is a truffle flavored mayo and is SO good! I’ll put a link below for it. But you can use any mayo flavor you like or mustard or even pesto would be great! Then just choose whatever sandwich ingredients you like. This will determine the final carb count for your sandwich. The flatbread divided in half has about 5 carbs.
Here I first put a layer of green lettuce, then tomato slices, then red onion. You could also add some avocado if you like, but I left the avocado out to save on carbs So the tomato and red onion had the most carbs. Cottage cheese is also packed with a lot of good protein!
Next, ham slices, pepper jack cheese slices, and bacon. The bacon really adds a delicious crunch. Then just fold the other half on top or another way is do a wrap roll up and you could spread the ingredients all up and down the flatbread then roll it up!
What a GREAT flatbread! It was SO good, very easy to make and very low carb! There are so many different kinds of sandwiches to make. I’m thinking a great breakfast sandwich or rollup with scrambled eggs, sausage and cheese or an Italian grinder sub sandwich would be so good.
Treat yourself to this delicious Truff Mayo! So good! It adds a very distinctive, interesting flavor, original and spicy flavors. It improves the flavor of everything you put it on!

There are other things to do with this flatbread besides for sandwiches or pizza! Spread the mixture as thinly as possible before baking and use it for lasagna noodles!
