Saw this great recipe on eatwell101.com and had to make it. The Cowboy Butter sauce turned out so good and it would be excellent on just about anything! You can put it over protein or vegetables and was delicious over the zucchini zoodles. This dish is very low carb also so it presses all the healthy culinary buttons!

Ingredients
4 chicken breasts
4 medium zucchini
butter
lemon
garlic
Dijon mustard
cayenne pepper
paprika
low sodium chicken broth
sriracha
parsley
chives
thyme
crushed red pepper flakes
black pepper
I started out by adding the seasoning to the chicken.
Then added butter to a skillet and seared the chicken.
Once seared on both sides I removed the chicken from the pan.
Next I added all the ingredients for the yummy Cowboy Butter sauce
I simmered the sauce for 2-3 minutes
Next, I put tge zuch In the zoodle maker I used an easy handheld one, I’ll put the link below I then added the zoodles to te skillet and cooked them in the sauce for 2-3 minutes then added the cooked chicken back into the pan
I used dark meat chicken thighs and they tasted great, but I think this dish looks better with the breast white meat. I should have garnished with some lemon and parsley too!
