I saw Steve, with Blue Collar Keto on YouTube, make meatloaf muffins the other day, and I just thought MEATLOAF! I haven’t had meatloaf in forever! So I saw this Cracker Barrel Copycat recipe and thought it could be easily ketofied!
I loved this recipe because it had a cheddar cheese mix and a ketchup topping. Meatloaf isn’t meatloaf to me without a ketchup topping! I love how, as it bakes, the topping gets caramelized! YUM!

To make it keto, I subbed the Ritz crackers with the same amount of Cajun-flavored pork rind crumbs. Here is the link for what I used.
I sautéed the chopped onion and bell pepper and had to add a chopped jalapeño! It doesn’t really make any heat, just flavor. I then mixed all the ingredients with the pork rind crumbs subbed for the crackers; I also omitted the milk; it really wasn’t necessary without the crackers. I placed the mixture in two of these great pans with a device to easily lift whatever you are baking from the pan.
Here is one similar to mine. I loved how easily the meatloaves just lifted out! These are good for anything you are using a loaf pan for.
So here are the mama and baby meatloaves! Ha! The recipe said not to stuff the pan with too much meat mixture so it doesn’t just boil and steam.
So it went in the oven, and after about 30 minutes, the ketchup topping went on, and they baked for a few more minutes.
The yummy finished products! I loved this meatloaf so much. Brought back memories of my mama’s meatloaf. These meatloaves were gobbled up! Try some comforting meatloaf when you can! 😊
Heck yeah going to try this next and get me some of those spicy crumbs!
