Keto Garlic Bread Meatball Appetizer Bites

I was experimenting with the great Fox Hill Kitchens Bread Mix and saw this recipe by the amazing lifebyleanna on Instagram. This girl is beyond belief in her creative entertaining ideas and every once in awhile I can ketofy one of her recipes, not very often though but I try! She is so fun to watch, definitely look her up on Instagram!


She was making a Garlic Bread Meatball Wreath. That’s her with it below. Anyway, she made it a wreath shape and added a red bow to make it festive. So I thought I can do that and make the garlic bread with the Fox Hill Kitchens Bread Mix and I can add a red bow too! Ha! Leanna also used frozen Turkey meatballs, but I bet they have breading, so I made my own meatballs. Us Keto dieters deserve a meatball wreath too, don’t you think?


So here’s how I made these Keto Garlic Bread Meatball Appetizer Bites!

After it had risen I cut it into four equal parts and used one of the parts to roll out for the dough bites.



Try and keep the dough in a rectangular shape.


Cut into squares.


You can stuff the dough with whatever you like, but I used Italian sausage meatballs and pepperoni with mozzarella



Sauté the Italian sausage


Let the meatballs cool. You could add some cheese and that would be good also


The other stuffing I chose was sliced pepperoni and mozzarella sticks I think a block of mozzarella would have been better than these long cheese sticks. These garlic bites were flatter after baking than the meatballs so a better way I think is to make the mozzarella into some somewhat larger squares.


Bake at 325 degrees for about 15-20 minutes or until very slightly browned


After baking I topped the bites with garlic butter with some parsley


Serve with your favorite dipping sauce Shown below with marinara and a Christmas bow!

They also can be made in other shapes like a Christmas tree sprinkled with pomegranate seeds and fresh rosemary! I made a star out of the dough and baked it along with the garlic bites



Or a cross for Easter!


The nutritional information is based on the bread first. It was 13.5 carbs and there were 40 bites. So that’s 0.3 carbs per bite, then the ingredients used to stuff the garlic bites were almost zero carbs. So basically 0.5 carbs per bite.
