It’s Halloween night, and your home is filled with ghoulish decorations, creepy music, and a crowd of sugar-loving trick-or-tweeters. But you're on keto, and the only thing scarier than all the candy you’re probably surrounded by is not phaving something tasty that you can have for Halloween! Enter: the Keto Ghost Cheeseball—a super yummy snack it will spook those carb-laden treats right off the table!
This cheeseball isn’t just any ol’ cheeseball. Oh no, this cheeseball is shaped like a very cute ghost! Think of it as the Casper of keto snacks—friendly, low-carb, and here to make your Halloween night better and help you stay on track.
Here’s the recipe I used.
You’ll need cream cheese, shredded cheddar, beef deli meat, chopped green onion, and a dash of spooky magic (aka garlic powder, and I added half a package of Ranch Dressing Powder). The recipe did not call for the Ranch Powder, but I thought the cheeseball mixture needed some additional flavor so I added the Ranch, but you might like it with just the garlic powder. I also added some chopped bacon, everything is better with bacon, and only one bundle of green onion because that’s all I had and I thought it was fine
Mix all of this together until it is thoroughly incorporated and let it chill for a few hours or overnight if you can.
Next is where the ghost takes shape. Take the cheesy mixture and shape it into whatever ghostly shape you like or any Halloween shape will also work. o
Next sprinkle with finely shredded mozzarella and you can’t have a ghost without a face! Use black olives for eyes or even some crunchy bacon bits to create a haunted expression. Remember, the scarier the ghost, the more likely it is to ward off anyone trying to tempt you with Halloween candy. Your ghost cheeseball will stare down those Reese’s Cups with a "don't-even-try-me" look.
What’s a cheeseball without crackers? But, of course, we’re keeping this keto-friendly. Make some low-carb crackers by using almond flour, shredded cheese, an egg, a little butter, and spices. . You can even get fancy by cutting them into Halloween shapes like ghosts, skulls, cats, bats or pumpkins, which will make your ghost cheeseball feel right at home. I thought they came out amazibg.
I used this great recipe for Cheesy Keto Crackers and changed it up just a little bit.

I just put everything in a food processor and used it to shred the Pepper Jack Cheese and then mix everything until it formed a ball.
I did add some more almond flour so I could use the cookie cutters. The dough was too wet. I also chilled the dough for a couple of hours.
You can roll the dough out with a rolling pin, between two pieces of parchment paper or I just put a small dough ball in a tortilla press with some plastic wrap. Then cut out all the Halloween shapes I’ll put a link below for the cute mini Halloween cookie cutters I used
You can bake on parchment paper, but I love these silpat mats. They save on parchment paper and protect the environment. I use them all the time. I’ll put a link below.
The recipe says to brush with melted butter and sprinkle with salt and I forgot to do this. I had a 5 year old cracker assistant who made me very forgetful. Five year olds want to do EVERYTHING and need no help whatsoever! Ha!
Bake a 300 degrees for 20 minutes and make sure to let the cool before taking off the cookie sheet
I also just made some plain crackers and sprinkled them with Everythibg Bagel Seasoning. These turned out really good also.
In regard to carb count, All Day I Dream of a Food has them at 6 cracker for 3.9 carbs. This is probably very close, but the best way to figure this is count how many you made and divide it into the total amount of carbohydrates of your ingredients.
