This is for all the fans of goat cheese!
Any recipe I can complete in under 10 minutes is a hit! The best part is the end result: a fabulous creamy and slightly sweet cheesecake.
Just a few ingredients are needed: le chevre goat cheese, heavy cream, gelatin, sweetener, and creme fraiche, plus strawberries and mint.
I first tried goat cheese when I was in my mid-20s. I bought a sandwich from a local restaurant: grilled chicken with goat cheese on focaccia bread. It sounded intriguing, but I had never had goat cheese before - but it is cheese, so I was sure to like it! It was a bit of an alarm. I recalled that it had a strong taste and wasn't a fan. But, I slowly became an admirer and realized there were many types of goat cheese. Perhaps my taste buds acclimated, or I just found some that worked. Crème Fraîche is an ingredient I haven't used too often. It has a smooth, creamy texture. My local grocery store only carries one brand of crème fraîche, and sometimes, there are only one or two containers of it when I buy. Sour cream can be used as a replacement if you can't find any at your local store.
I didn't have plain gelatin listed for this recipe, so I used raspberry gelatin from Simply Delish. It worked out great and added a bit more sweetness, giving the cream mixture a slight pink hue. You have to account for it in your macros.
I used ramekins to chill these individual cheesecakes in (instead of the suggested jelly jars). After an hour, take them out and you'll have a nice tasty treat.
