I've made this a couple of times now and it's excellent. The second time I made it (on Thanksgiving) it seemed like the Xanthan gum wouldn't mix in properly and I was worried I'd ruined it. But I threw everything in the blender and blended it for just a few seconds and it came together beautifully. I think this was the best turkey gravy I've ever made. I wonder if the flour in pre-Virta versions somewhat masked the turkey flavor.... For Thanksgiving I just used the drippings from cooking the turkey and a approximately 1 cup of extra turkey broth. I did not add any butter, and I probably only used about 1/4 cup of cream.
