Keto High Protein Avocado Cottage Cheese Bread🥑

In my quest to experiment with all things cottage cheese I saw this recipe for Kero Cottage Cheese Avocado Bread on Instagram on the patrickmckennahealth page. I just had to see what would happen if I made cottage cheese bread! This was about my fourth recipe in the last few days with cottage cheese and I haven’t been disappointed yet, well we just won’t count the cottage cheese ice cream! That was a year ago! So I had high hopes with this newest, trendy keto ingredient.


First Step

Place all the ingredients in a bowl. I experimented adding a tablespoon of Fox Hill Kitchens amazing keto/low carb/gluten free bread mix. I love this added to give a more bread-like taste and structure to breads, chaffles, tortillas, pancakes, and more! It has all the bread ingredients done for you in one bread mix. Coconut flour, almond flour, psyllium husk powder, egg white powder, starch-free baking powder, Himalayan salt, yeast. Only 3 carbs per tablespoon to add a great bread-like taste!

Mix well.


Pour into a muffin top pan or hamburger bun pan prepared with cooking spray.


Or you can just free form the buns on parchment paper sprayed or brushed with your favorite cooking oil. Sprinkle with a little more Everything Bagel Seasoning if desired.


Bake in the oven at 350-400 degrees for 20 minutes or until lightly brown. (I was experimenting with other cottage cheese and cheese buns, those recipes to follow)


Take 1-2 buns and make your favorite sandwich.


I made a ham sandwich with Truff Mayo, (see link below) green lettuce, sliced tomato, sliced red onion, sprinkle of Himalayan sea salt, garlic, and black pepper (see link below.) Then on the other side of the bun I used the Truff Mayo again, 2 slices of pepper Jack cheese, 3 ham slices, and bacon. Then heat this half only in the microwave for acbout 30 seconds just to melt the cheese some. Then put the two halves together and slice. This sandwich was so delicious!







This mayo made with black winter truffles is AMAZING! It’s elevates any sandwich or whatever you use it for! Unfortunately it does have Safflower Oil, but I use it only for things in small quantities, so I rationalize it that way I look at as a treat

 

It also comes in a super yummy spicy flavor!

 

This is the great McCormick seasoning blend I use from Walmart. It has Himalayan pink salt, black pepper, and garic. A very good all purpose basic seasoning. Good on just about anything!
