Twelve little piggies all wrapped in their keto bread blankets!😄 I saw this recipe recently, and any time the words jalapeño popper appear in a recipe, I HAVE to make it! If there were jalapeño popper perfume, I would buy that for sure! But there was only one wee problem with this recipe. It calls for Pillsbury crescent dough! Oh no! What to do, what to do? Of course, fathead dough came to my mind, and I bet these little piggies would be very happy wrapped in that, but I’ve been wanting to try the Fox Hill Kitchens Bread Mix as a pizza crust, and I’m making Dallas Cheesesteaks (Philly ones with added jalapeno! Sorry Philly you don’t know what you’re missing!) tomorrow night for dinner and I needed a couple of small keto rolls for me. SOOO I made all three things from the one package of bread mix! So take that Pillsbury, that’s how healthy is done! (Gosh I wish there was keto dough in a can though like the crescent dough! Someone needs to invent that! Hey Fox Hill Kitchens there you go!)😀
The Fox Hill Kitchens products are the best keto/low-carb bread products I have ever seen! Do you know how every low-carb bread contains wheat in one form or another? Not Fox Hill Kitchens! No wheat and they use the best good clean ingredients. I’ve tried every product they make and I like them a lot.
BUT full disclosure, I’ve had two people tell me they did not like them. One of those two people is a family member, who has severe diabetes, doesn’t eat properly, and does not do keto! Her taste buds for keto food and mine are on opposite ends of the spectrum! She eats carby bread and foods every day, I’ve been doing keto for over six years! I’m VERY grateful for these bread products!
Fox Hill Kitchens products simply are not going to taste as good as carby bread with wheat! But, they are healthy, and I think are very good when you eat them in certain ways and they are not going to make you sick! We have to face it, wheat-laden products are a huge reason my family member and half the country are in the condition they are in and it breaks my heart. So I think we sacrifice a little bit of taste to stay healthy. These products still taste good to me though or I wouldn’t keep buying them. If I don’t like something I will not eat it, no matter how healthy! OK, I will get off my anti-wheat soap box now.

Mixed it all super easy and fast.
Formed it into a ball, covered it with plastic wrap and a towel, and let it proof for four hours
Dough all made. Now another itty bitty problem, I had no little smokies! BUT! I did have some Eckrich Jalapeño Cheddar sausage this is my favorite breakfast sausage because it’s jalapeño AND cheese!
Here’s the scoop on them. So great with eggs for breakfast. I buy them at Walmart.
I just cut the sausage links in half. Definitely larger than the Little Smokies, but more protein to love! But the Little Smokies might be better as they would use less dough to wrap around them. Then I halved and scooped out the jalapeños, and made the cream cheese mixture.

I then filled the jalapeños with the cream cheese mixture. A friend is coming for dinner who doesn’t like jalapeños so I just cut some bell pepper slices or you could use mini sweet peppers too.
Then place the sausage halves on the peppers.
And through the magic of blog posting the dough is ready.
I cut it into 7 slices. The larger slice was for my pizza crust. (I’ll keep you posted on how that turns out!) The nutritional label says the bag of bread mix makes 9 buns at 7 carbs each. I have never made a loaf of bread with this mix, only buns and rolls. I will have to try a loaf sometime. I just like the smaller rolls. Fox Hill Kitchens also offers ready-made bread rolls and buns and I like them also.
I rolled the dough and put it in long triangles. You don’t have to cut the triangles like the crescent roll dough, just straight strips would work fine also.
All rolled and ready to bake! I ran out of dough, so I wrapped the remaining peppers in bacon! They were great that way too, just leave the crumbled bacon out of the cream cheese mixture and sprinkle them with a little seasoning salt before baking.
And both finished products! I’m roughly estimating about 3.5 carbs for the bread wrapper, 1.5 carbs for the sausage, 1.5 carbs for everything else. So a total of 7.5 carbs apiece. Of course to cut the carbs you can always use less dough or use the bacon wrapper. I’ve enjoyed these a lot. Hope you can make them too! 🌶️
