The other day I was on Instagram and saw iRick, the cutie patootie Keto Snackz guy, make keto fries out of cottage cheese! Now I know cottage is trending now, but fries?đ± My curiosity got the best of me so I just had to make them!
I did change up iRickâs recipe just a bit. I thought the fries might need some spice so I added a small chopped jalapeño and onion powder, garlic powder, and seasoning salt. But you could add any seasoning you like or none at all.
This is a very quick recipe so it would be easy to just do a batch to go with a sandwich or just as a snack.
I thought the taste was good, but you could dip strips of cardboard in Sugarfree ketchup and it would taste good. ( just kidding!đ).
So letâs make some fries!
Gather your ingredients
Shredded Parmesan Cheese
Cottage Cheese
One Egg
Chopped Jalapeño (seeds and ribs removed)
Onion Powder
Garlic Powder or Minced Garlic
Seasoning Salt
Parsley
Place all the ingredients, except the parsley in a small food processor or blender. I use this NutriBullet all the time for meal prep and smoothies!
Just give it about 3 pulses. If the batter is thinner it will spread more when baking. Then take the mixture and form French fry shapes on parchment paper or silicone mats. I love these silicone mats when baking because they do such a great job keeping things from sticking. Most of the time I donât have to use baking spray. I like this set with the round mat because I use it to make tortillas and pizza. You can also use it to line a cake pan so the cake doesnât stick! Brilliant! The sheets are amazing for baking cookies or anything else.
I put the first batch in a piping bag and that worked fine. Or you could use a baggie and just cut off a corner tip, but the second batch I just formed the fries with my fingers and that worked just as well.
Hereâs my first batch ready to bake.
Then baked at 400 degrees for about 11 minutes. The recipe says 12, but I thought they looked done at 11 minutes. Your oven may vary.
They looked a little flat, which was dissapointing, but still tasted good. I had a couple of friends with me when I was baking them and the 5 yo grandson really liked them and said, âAre these âhealthy French fries?â I said, yes. He cooks with me a lot and knows I cook healthy. He said he wanted me to make more so he could take them for lunch at school! I served them with Sugarfree ketchup.
My next batch I tried not blending the mixture as much to hopefully thicken it more to keep them from spreading, but that didnât work either. Perhaps some xanthan gum would help or almond flour, but that would add carbs. So when they were almost done, I took them out of the oven and cut them into French fry shapes and baked for another 5 minutes.
Now these look like French fries! đ
Hereâs how iRickâs fries looked. They do look better, but Iâm not sure how he made that happen. Several people in the comments had the same problem I did with them being too flat.
You can also cook them longer to make them more crispy. I turned them over and baked then for another few minutes. I liked them both ways.
This was a fun experiment and just shows how much cottage cheese just keeps on giving more and more keto recipes. I bet the cottage cheese industry is ecstatic! đ
