Keto Onion Ring Chips

These chips are being made all over Instagram and Tik Tok! They are the new sensation in the ever-evolving world of keto-friendly snacks. 2-Ingredient Onion Ring Chips. These crispy, yummy chips are not only incredibly simple to make but also perfect for those of us on keto.


What Are 2-Ingredient Onion Ring Chips?

As the name suggests, these chips require just two primary ingredients: thinly sliced onions and shredded cheese. When baked together, they transform into very crispy, delicious chips that can beat traditional potato chips, at least I think they do! The amazing flavor of the caramelized onions combined with the melted cheese creates a snack that can fit easily into your macros.


I’m fairly certain Stella Drivas, with hungryhappens.net, is the person who came up with this recipe. But so many people are making the chips there are some other variations out there. But this is how they were made originally, but you can certainly make them your own and seasoning them however you like.


You can also serve them plain or with a great dip or sauce.



Ingredients


2 Small Yellow Onions

Shredded Parmesan Cheese

Garlic Powder

Paprika

Salt and Pepper

Olive Oil


This is SO easy! The longer you cook them the crispier they get. You do need to watch them so the cheese doesn’t burn though in the hot 400 degree oven.


First Slice the Onions


If you have good knife skills you can just slice the 2 small onions very thinly or use a mandolin. I’ll put a link below. Mandoline’s (link below) are very handy in getting nice uniform slices. I used yellow onions, but white onions work well also.


Preheat oven to 400 degrees. Get a large baking sheet and line it with a Silpat mat or parchment paper. Spread out the Parmesan cheese evenly across the baking sheet. I used a 6 ounce bag of Parmesan, but mozzarella will work also.



Place onion slices on top of the Parmesan and put the slices very close together, but not over-lapping.


Brush with a very small amount of olive oil and sprinkle with garlic powder, paprika, and salt and pepper. Place in the 400 degree oven for 15-20 minutes or until brown and crispy.



Remove from the oven and let cool then cut with scissors or a knife into square chip shapes.



Serve with your favorite dip or sauce.




Carb Count-


A small yellow onion has 6.5 carbs, so two would be 13 carbs, plus however much cheese you use then divide that amount of carbs by the number of slices you have. To cut down on carbs slice the onions as thinly as possible and you also don’t have to use an entire slice. You can just use a few rings per chip or half a slice.
