This is a pasta salad I just created off the top of my head a long time ago, but it’s been a family favorite ever since. I usually make it with carby Farfalle pasta, but that’s definitely not keto!
The carby version is on the right and the keto version on the left. I think the keto version looks great compared! The recipe is basically all keto except for the pasta, finding a keto pasta in an appropriate shape for pasts salad is not easy though.
These are some low carb pastas that I feel are keto appropriate. But there are some low carb pastas that are the right shape but I think have too many carbs and not-so-great ingredients, however if you used just a small quantity they could possibly work. But this keto penne pasta I think is the best and only choice that I think would work for this pasta salad.
This pasta was fairly good, a little chewy and I did boil it for about 15 minutes. I thought just plotting it dry would work, but it still had some moisture. So definitely do the pan fry method of drying out the pasta.
I did cook the pasta first and let it be chilling in the refrigerator.
I also think this recipe would be good without the low carb pasta, but it wouldn’t exactly be pasta salad anymore!
Here are all of the ingredients used. This pasta salad can be however you want to make it. Use these ingredients in whatever quantity you like. You can see from the photo below these were the ingredients and quantities for the carby version, but I used the same ingredients for the keto version and I show the quantities for my keto pasta salad below.
Ham (Use any deli meat you like, and cut into small slices)
Cheddar Cheese (Use any cheese you like, and cut into small slices)
Havarti Cheese (Use any cheese you like, and cut into small slices)
Grape Tomatoes (I used a large package and cut them in half)
Broccoli Florets (I used fresh broccoli cut into small florets and blanched for 2 min)
Green Onions (chopped)
Sliced Black Olives (Use 1-2 cans)
Mayonnaise (Use mayo of choice and mix with the Italian dressing then pour over salad)
Italian Dressing (Mix with mayo to make a great dressing)
Salt and Pepper
So easy and enjoy!
My keto version ingredients and you can see the shirataki penne pasta in the center of the plate. I also added some bacon! YUM!
