Keto Pizza Onion Ring Chips🍕

What Are Pizza Onion Ring Chips?

These chips are a blend of thinly sliced onions, shredded cheese, and pepperoni slices, baked together to create a crispy, flavorful snack that is like both pizza and onion rings. The natural sweetness of caramelized onions is just incredible with the taste of melted cheese and pepperoni.

How to Make Pizza Onion Ring Chips

Ingredients:

  • 1 large onion sliced into 1/8-inch thick rings

  • 16 oz freshly shredded mozzarella cheese or Parmesan cheese

  • Pepperoni slices

  • Olive Oil

  • Garlic Powder

  • Italian seasoning

  • Red Pepper Flakes (optional)

  • Salt and Pepper

Instructions:

  1. Preheat the Oven: Set your oven to 400°F (200°C) and line a baking sheet with parchment paper or I like to use a Silpat mat. (see link below)

  2. Prepare the Onion Rings: Slice the onions into 1/4-inch thick rings and separate them into individual rings. You can use just a knife, but I like to use a mandoline to get even slices. (see link below)

  3. Assemble the Chips:

    • Sprinkle the shredded mozzarella or Parmesan cheese on the prepared baking sheet.


    • Place onion ring slices on top of the cheese, close together but not over lapping.



    • Brush the onion slices very lightly with olive oil and sprinkle the seasonings on top



    • Place pepperoni slices on top of the onion slices. I did three slices of pepperoni per onion slice but you can do one or two also. I just wanted an extra pepperoni taste!



    • Sprinkle with more cheese, I chose just some grated Parmesan as I didn’t want to add that much more cheese.



  4. Bake: Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until the cheese is golden brown and crispy.



  5. Cool and Serve: Allow the chips to cool on the baking sheet for a few minutes before transferring them to a serving platter. I used scissors to cut them into squares. Enjoy them by themselves or serve them with a keto-friendly dipping sauce like sugarfree marinara or Ranch dressing.



Why They're Perfect for Keto

Traditional pizza and onion rings are often high in carbs due to dough and batter. This recipe replaces those components with onion, cheese and pepperoni, making it a keto-friendly alternative that doesn't compromise on flavor.

Tips for Success

  • Cheese Choice: Freshly shredded Parmesan cheese melts better and avoids additives found in pre-shredded, but mozzarella is also a good option. That’s what I used.

  • Uniform Onion Slices: Consistent thickness ensures even baking and crispiness. This is where a mandoline comes in handy.

  • Carb Count: It all depends on the cheese you use, how much cheese you use and how much pepperoni. A large onion is 14 carbs, so the thinner you slice it the better. You also could put just a few rings down and not use a full slice to cut down on the carbs.

  • Storage: For the best texture, enjoy these chips fresh out of the oven. They get a little soggy stored until the next day, but you can put them back in the oven to recrisp.
