Keto Pumpkin ChilišŸŒ¶ļø

Shhhh donā€™t tell anyone, but this Texas girl just added pumpkin to chili!šŸ˜² I was trying to explore some savory pumpkin recipes, because it is fall you know and pumpkins are EVERYWHERE! This recipe I found even added pumpkin spice! Thatā€™s actually bordering on sacrilegious! But Iā€™ve always lived life on the wild side, actually no I havenā€™t. Iā€™ve always been Miss Goody-Two-Shoes so maybe itā€™s time for me to do something crazy and add pumpkin and pumpkin spice to chili!


Iā€™ll wait to the end of the recipe to tell you what I thought of it. This kind of reminds me of that Cincinnati chili that has the cinnamon in it. I actually have developed a taste for it because the only manufactured chili I have been able to find is two brands of Cincinnati chili. I remember the first time I tried it I remember thinking, ā€œWhat in the world is this?ā€ It tasted VERY strange to me, but now I like it. Itā€™s the famous chili they pour over spaghetti in Cincinnati and pour a huge mound of cheese on top! Those wacky Cincinnatians!


Hereā€™s my post where I talk about the Cincinnati chili, I had to make the keto chili spaghetti!





We arenā€™t going to pour the pumpkin chili over spaghetti this time, but I suppose you could. Iā€™m just going to make a great pot of pumpkin chili to try just on its own merits!šŸ˜Š


Hereā€™s the recipe I used and I didnā€™t really change much at all to start with but I did feel like it was a little bland so I added more of the spices and a couple tablespoons of minced garlic plus a few sprinkles of cinnamon.



Ingredients


  • 2 lbs grass fed ground beef

  • 1 yellow onion

  • 1 red bell pepper

  • 32oz of 100% tomato juice (Add more if you prefer a thinner chili)

  • 1 ā€“ 28oz can of diced tomatoes in tomato juice

  • 1 ā€“ 15oz can 100% pumpkin

  • 1 tbsp pumpkin pie spice

  • 1 tbsp chili powder

  • 2 tsp cayenne pepper

  • 2 tsp cumin

  • 2 tablespoons minced garlic

  • sprinkles of cinnamon to taste


Steps:


I love chili that has bacon, so I started out and fried about 8 slices of bacon to garnish the chili with. removed it from the pan then sauted the onion and chopped mini sweet peppers in the bacon grease for extra flavor.





Mix the meat into the veggies and brown well. Strain and then put back in the pot.





Add in the rest of the ingredients and let simmer on low for 30 minutes.










Taste your chili, adjust seasonings as you like and cook for another 30 minutes. I did add more seasonings.




Garnish with Bacon, Sour Cream, Shredded Cheese, Chives, chopped Onion, or Green Onion, Serve and enjoy!





And what was the final verdict on this Keto Pumpkin Chili? Itā€™s a keeper! Iā€™m sure the people of Cincinnati will be very happy! Just donā€™t tell the people of Texas about this! šŸ¤
