Keto Raspberry Cheesecake Stuffed Chaffle French Toast Casserole


When I saw this recipe, I just said, “Wow, I have to make it!” I love berries, cheesecake, chaffles, and French Toast, and this is the casserole that just keeps on giving!


Here’s the great recipe I used. I followed it pretty much, but I had some Fox Hill Kitchens Bread Mix, and I decided to make the chaffles from that. They came out amazing, but they certainly use the recipe’s chaffle instructions.



Here’s the info on the Fox Hill Kitchens Bread Mix. I’ve made so many great keto bread things, like rolls, buns, pizza crusts, and tortillas, in addition to the chaffles. This mix has all good, clean ingredients and is low-carb, gluten-free, sugar-free, and wheat-free!

Here’s my recipe with the Fox Hill Kitchens Bread Mix chaffles.




I first made all the chaffles.



Then next put the first layer of chaffles in a greased baking pan




Next came the yummy raspberry cheesecake layer.




Finally the egg custard mixture, or you could add another chaffle layer here also. I let it all soak for about 30 minutes before baking.



Then out of the oven and let it cool. Garnished with sugar free whipped cream and fresh raspberries. SO GOOD and approximately 8 total carbs per serving with the Fox Hill Chaffles. The recipe as written says 6 net carbs, but fiber wasn’t listed so I’m not sure on total carbs, but I would think it would be somewhat close. The bread mix is 3 carbs per tablespoon.
