Keto Sausage Stuffing

YES! You can have stuffing on keto, so don’t despair. I hope this saves Thanksgiving! This recipe is so delicious and here’s how to make it.


Ingredients

keto hamburger buns

breakfast sausage

chicken broth

onion

celery

jalapeños

minced garlic

butter

egg

poultry seasoning

parsley

salt and pepper

Cut the low-carb buns into somewhat large cubes.

The best and lowest carb buns are from Fox Hill Kitchens. They are also the only wheat free buns. They unfortunately are discontinuing all there ready made bread products after the end of the year, but you will still be able to get their amazing bread mix any time. I use the bread mix for so many things. It also tastes amazing, fresh out of the oven with some butter!

But all you have to do for the lowest carb and wheat-free stuffing is just use the bread mix and make rolls. Then cut the rolls into chunks after they are dried out or toasted.


I used the Fox Hill Kitchens products to make this stuffing but another low carb bread would work also. Just try to find one that is the lowest carbs possible so I would buy some keto hamburger buns, let them sit out for a day or two and dry out or toast them. The buns will allow the larger cubes of bread that is so good in this recipe.


I looked at a few keto hamburger buns and this was the lowest carb I found at 15 carbs. Only 1 net carb though. For Thanksgiving only should we count net carbs? Ha! These will make the nice larger chunks and the objective is to use more sausage and veggies to keep the carb count down, but stuffing HAS to have some bread and it is Thanksgiving!




But I used the Fox Hill Kitchens small or large Bunz, or you can make a loaf of bread with the bread mix and cut the bread into cubes. Brown your protein of choice.

Next, I browned a roll of pork breakfast sausage (this is optional, but I just thought the stuffing would be good with some added protein!), then added to the pan chopped onion, chopped celery, chopped mini sweet peppers (optional, but adds great flavor and color) and of course, I had to add some chopped jalapeño. But you could add mushrooms, nuts, fresh herbs, or anything else. I also added some chopped garlic.


Add broth to the mixture.

I mixed the chicken broth with the melted butter and spices. I used seasoning salt and pepper. Pour this mixture over the bread chunks, add the sausage mixture, and mix well.


Prepare to bake the stuffing.

Then, pour this into a greased baking dish and cover it with foil. I then placed the dish in the air fryer to bake at 325 degrees. Baked it for 15-20 minutes covered and about 5-6 minutes uncovered. You have to be careful with air fryers as they cook much faster than a regular oven. Just check it regularly so it doesn’t get overcooked. You may also cook it in a cinvemtial oven. It just seems like I cook everything in the air fryer these days.
