This is a nice cool lunch or dinner for a hot summer day. The only cooking is the 2 minutes or so required to boil the shrimp. I loved this recipe because is creamier and less tomatoey than a traditional shrimp cocktail. This sauce is also so good and can be used on fried foids, baked fish or even works as a salad dressing!

Itās so easy to make and hereās how.
Gather your ingredients.
Next boil the large size shrimp in salted water and then refrigerate for 30 minutes or so.
Then when cool peel and devein the shrimp. I like the shrimp whole but you could chop it at this point if you prefer. Put the shrimp back in the fridge.
Chop two cucumbers in a very small chop.
Then place all the ingredients in a bowl and refrigerate and hour or two, serve and garnish with fresh or dried parsley if you like. Stay cool and enjoy!
