I ♥️ Power Bowls! They are just so good and I love that they are a healthy meal all in one powerful bowl! I saw this amazing shrimp power bowl on the YouTube channel of ShredHappens. The man behind these great Mediterranean Keto recipes is Arash Hashemi, and oh my heavens he makes the most gorgeous, healthy food and has this very incredible voice, I could listen to him and watch him cook all day!
He cooks with the most amazing spices too and it’s because of him I’m buying all these Middle Eastern spices I’ve never heard of like Fenugreek and Sumac!
He’s a self-taught cook who enjoys bold flavors, whole foods, and creates all these amazing recipes, particularly salads. His salads are delicious and he cooked this low-carb healthy, simple way and has lost 100 pounds doing it.
He even has launched his own low-carb pasta and rice company called Kaizen Food Company. This pasta and rice does look good, and I would love to try it, but it just has too many carbs for me. I think it would be good to try for a special occasion possibly. It also I think is way too expensive, but again for something special, maybe!
But he has written his first cookbook and I don’t buy that many keto cookbooks, but I’m buying this one just to have all his recipes gathered together. You can preorder a hardcopy or Kindle version. It will be out out March 2025.
Here’s the video on how this delicious Shrimp Power Bowl is made.
I started out marinading the shrimp first. I used two 12 oz. bags of colossal shrimp. Dry the shrimp then add a little olive oil and the spices, garlic powder, paprika, Tajin, and a seasoning by McCormick that has Himalayan Sea Salt, Garlic, and Black Pepper. I bought it at Walmart.
I forgot the paprika for the picture, but remembered before the shrimp were cooked
Mix everything well and I refrigerated the shrimp until I was ready to cook it
Next I made the sauce of mayo, red curry paste and chili lime seasoning. I did find the curry paste used in the recipe, but it did contain sugar, so I just went with the Thai Kitchen red curry paste because it had all good ingredients.
Add the mayo (I used Sir Kensington’s Avocado Oil Mayo) red curry paste and lime juice I didn’t add the water as suggested
I then chopped the cucumber, got the avocado peeled, chopped the red onion, chopped the lettuce and cilantro.
I used romaine lettuce, but just about any lettuce will work
Time to cook the shrimp. Place the shrimp in a skillet with a very small amount of olive oil. Shrimp cooks very, very fast I only cooked it about 30 seconds on each side if you cook the shrimp too long it will be rubbery and you definitely don’t want that. Set the b cooked shrimo aside
I made some garlic and lime cauliflower rice. Very easy in the microwave. Just take the frozen cauliflower rice, add lime juice, garlic powder, and I used the McCormick seasoning. I cooked it on high for about 7 minutes
Next start assembling the power bowl. I did half cauliflower rice, half lettuce.
Finally add the cooked shrimp down the middle, add the chopped cucumber, red onion, top with the sauce and chopped cilantro. Sprinkle with sesame seeds. I used Everything Bagel Seasoning because it contains sesame seeds.
