Holiday time in Texas means tamales! That being said I have never made carby tamales, much less keto ones! But I can now cross tamale making off my bucket list! This recipe by Low Carb Love was very easy and did not take long.
There were a few recipe options for the tamale dough, but I chose this one because Mayra knows all about Mexican cuisine (see video) so I thought she would create the best keto tamale dough. The dough was very quick to make using the microwave. I don’t cook with lard, so I used some bacon grease I had saved instead.
I had some Queso Sausage Dip left over from Christmas and thought it would be good on top of the tamales with Pico de Gallo, more Mexican cheese, and Cilantro.
These tamales turned out much better than I expected. I thought it would be very difficult to create a keto masa dough, but this recipe did an excellent job. I would like to experiment further with different fillings.
To wrap the tamales, I used banana leaves, but corn husks are traditional with Mexican tamales.
For the tamale filling, there are so many options. You can do pork, chicken, beef, ground beef, or even a cheese filling!

And one last filling, a queso filling with roasted peppers. YUM!
So many amazing ways to experiment with keto tamales. Try them and don’t be afraid of them, they are worth the effort! 😊
