I love summer squash, especially yellow squash. I had a vegetable garden for a few years, and it was one of the beautiful vegetables that grew well. I would slice it up and sautee it with butter and onions for a quick side dish.
This was an equally quick dish—it took 20 minutes from start to finish. You peel the yellow squash just like you do zucchini, saute it until it is soft, and then mix it with the rest of the ingredients. The only thing I did differently than the original recipe was to top it off with grated parmesan cheese. It looked just like real linguine to me!!
